GRILLED DIJON PORK CHOPS

Smoky and tangy, delicious recipe from Derek Wolf at Over the Fire Cooking. 

Check out these new Grilled Dijon Pork Chops cooked over some hot  Charcoal. Lather the pork in Dijon mustard and other spices, let marinate for 2 hours, then easily grill these over the fire. Get an interesting and different flavor on the grill that is easy to make for the whole family.

INGREDIENTS

  • 3-4 bone in pork chop
  • 1/2 cup dijon mustard
  • 1/4 cup plain greek yogurt
  • 4 tablespoons of smoked paprika
  • 4 tablespoons of cumin
  • 4 tablespoons of garlic powder
  • 2 tablespoons of fresh peppercorns
  • Dash of chopped parsley
  • Salt (to taste)

PREPARATION

In a bowl, mix the Dijon mustard, yogurt, smoked paprika, cumin, garlic powder and salt thoroughly

Pour the mixture over pork chops and let marinate in the fridge for about 2 hours

Light your grill and let it preheat until the charcoal is ready. For extra flavor you can add in some hickor chunks or chips.

Place pork chops over charcoal and let for 5-6 minutes per side or until the internal temperature is 145F

Pull meat off grill, add parsley, and let rest for a few minutes
