GRILLED STEAK FAJITAS
Fire up the grill for this awesome yet simple dinner you can even make on a week night!
INGREDIENTS
Yields: 4-6 servings
Prep Time: ~25 mins
- 2 pounds flank steak
- 2 bell peppers
- 1 white onion
- 1 jalapeno, seeded and minced
- 1/2 cup soy sauce
- 1/3 cup lime juice
- 2 tablespoons canola oil
- 2 teaspoons pepper
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 12 flour tortillas
PREPARATION
- In a medium bowl, mix the soy sauce, lime juice, oil, jalapeno, chili powder, cumin, and pepper
- Place steak is a zip loc bag and add in half of marinade
- Close the bag and let steak to marinate in the fridge for 3 to 6 hours
- Light your charcoal
- Preheat grill for about 10 minutes and ensure coals are all ready with a light ash cover
- Lay stake over direct heat on the grill grate
- Cover grill and cook the steak for about 5 minutes per side, flipping once
- Cover loosely with foil and let sit for 10 minutes. Then, slice into thin strips
- While meat rests, toss peppers and onions in bowl with remaining marinade
- Place vegetables over direct heat on the grill
- Cover grill and allow veggies to cook for 5-6 minutes until tender
- Remove veggies from grill and cut into long, 1/4-inch strips and set aside
- Place tortillas briefly on grill for about 20 seconds a side. Keep an eye on them or they’ll burn!
- Add meat, toppings and enjoy!
